Ingredients
- Coconut Oil Spray, natural
- Almonds, sliced – ½ cup
- Almond flour – ¼ cup
- Paprika – 1 ½ Tbsp
- Garlic powder – ½ tsp
- Dry mustard – ½ tsp
- Sea salt – ¼ tsp
- Pepper, ground – 1/8 tsp
- Egg whites, large – 4
- Chicken tenders, all natural – 16 ounces
Directions
- Preheat oven to 475°.
- Blend almonds, flour, paprika, garlic powder, mustard, salt and pepper in a food processor until finely chopped. Transfer mix to another small dish.
- In a small dish, whisk egg whites. Add chicken tenders to egg mix and turn to coat both sides. Transfer chicken tenders to almond mix and turn to coat both sides evenly. Place tenders on wire rack and spray with cooking spray evenly on both sides.
- Bake chicken tenders until golden brown, 20–25 minutes. Serve alongside some seasonal, cooked vegetables.
